Wrapping dumplings takes time and skill. Usually it takes me 1-2 hours to wrap 2 baking trays full of dumplings, but for tonight’s dinner, my mom made about 36 pork and bok choy dumplings for the two of us.
I usually prefer chinese chives and chicken, but pork was all she had at home, might as well use it up. And my favourite dipping sauces consists of a combination of red chinese vinegar, chili oil and fresh ground black pepper.
